Susan is a 55 year old female living in Australia. She is a teacherand is married with 2children, a daughter Joelle aged 25 and a son Jack aged 23. Susan has recently beendiagnosed with Type 2 diabetes. The condition does run in her family as Susan’s motheralso had Type 2 diabetes over which she had poor control. During her pregnancy withher second child Jack, Susan had been diagnosed with gestational diabetes but followingthe birth she no longer had the diabetes. Susan has been on blood pressure medicationsince the age of 47 and currently has her blood pressure under control. Her doctor hastold her that with attention to diet and exercise her Type 2 diabetes can be eliminatedcompletely. This would involve strict food portion control, reduced intake of simplecarbohydrates such as bread, white rice, potatoes, pasta, desserts and cake. The doctorhas said that controlling her weight will also help. She knows that she has put on acouple of kilos over the years. When Susan was in her 30’s it was easier to lose weight.She used to attend gym but this has fallen off over time. In her 40’s Susan started to puton weight most likely because she would have a glass of wine or two in the evening.Susan knows other women of her age who have Type 2 diabetes and who do notmanage their condition very well. To some extent she does not believe that she will becapable of making the dietary and physical changes required to manage her blood sugalevels.Susan is a great cook and loves to entertain with lavish dinner parties. Cooking is one ofher favourite leisure pass-times. It is a way to unwind and relaxafter her stressful dayeaching adolescent high school students. Her guests always compliment her on hercooking. Her husband Dan also boasts to his friends about Susan’s cooking. Susan knowsthat her family would find it difficult to adjust to a different way of eating. Joelle may besupportive as she is at an age where looking good is important and she eats very little.Her husband and son though would be reluctant to change their diet. As Susan isemployed full-time, cooking different meals for different members of the family is not aroption. It is also very unlikely that her husband would join her on daily walks or otherphysical activity. He is a blue-collar worker and likes to come home and relax with acouple of beers and then eat what he calls a ‘good meal’.susan wonders whether making small changes to her diet will be sufficient to keep herblood sugar under control. However, she has recollections of her mother seeing a dietician when she was diagnosed with Type 2 diabetes and that the advice was not easyto follow. Most of the advice was to ‘eat healthy’ and there was a long list of foods whichcould not be eaten. In fact, there was very little which was acceptable food to eat. Susanalso remembers the dietician using a food chart with portions of food which wererecommended. She knows these food facts already. What she needs is direction as tohow to continue to cook tasty and nutritious food which is suitable for her Type 2diabetes.
